Recipe of the Month - Veggie Fried Rice

Vegetable Fried Rice
  • 2 tablespoons sesame oil
  • 3 cups cooked brown rice
  • 1 yellow onion diced
  • 1 cup frozen peas and carrots
  • 1 cup chopped broccoli
  • 1 egg
  • 2 tablespoons low-sodium soy sauce
Add oil to pan on medium high heat. Add inion and stir fry until soft, then add peas, carrots and broccoli and stir fry for 2-3 minutes. Add rice and soy sauce and and stir fry for 3-4 minutes. Move mixture to side of pan and crack egg to scramble in center of pan. When mostly scrambled, combine egg with everything and remove from heat.
